Glenda is the co-founder of the Canadian Birch Company and has been producing premium birch syrups harvested from 160 acres of birch forest since 2012. Glenda and her co-owner and husband Rory have toughed it out in an unforgiving industry dependent on the climate conditions. They have scaled up production by learning from the maple industry, shifting from a labour-intensive pail and tap method to a vacuum assisted sap collection line. This shift, along with their shift towards online sales, have allowed the business to carry on even through the COVID-19 pandemic.
