Patti Hollenberg is the Co-Owner of Chess Piece Pâtisserie. The company is Fredericton’s only Parisian style café offering desserts, macarons, savoury pastries, soups, sandwiches and more. The team at Chess Piece bake their desserts from scratch daily. Partnering with other organisations and businesses, Chess Piece Pâtisserie is currently the operator of The Beaverbrook Art Gallery’s new café. Further, the company is set to become the food service provider in the Fredericton International Airport’s (YFC) new, expanded terminal when it opens in 2021.
