Evelyn Ernst

Evelyn co-founded Terra Beata farms with her husband in 1998. When they came across cheap land in an undeveloped peat mog, where cranberries grow well, they immediately saw the potential and purchased the lot. Initially aiming to sell fresh cranberries to at-home cooks, they soon realized that there was higher demand for processed cranberry products and found their stride drying cranberries with less sugar than other brands. Terra Beata is a successful exporter, shipping most of their fruit to international buyers, and Evelyn often jokes that their brand is better known in Europe than in Canada.
