Kristina Botelho opened her first “fast casual plant-based café” after experiencing the health benefits of a lactose-free, raw foods diet. With a background in restaurants (she’s been involved with franchises including Caffe Sorrentino, Booster Juice and Quiznos) “Kb” invested in a chef to consult on the menu. The response has been so overwhelming that more locations are planned catering to vegans and all-foods aficionados alike. “You don’t have to go to yoga, or wear a man bun to eat here,” she jokes.
