Marilyn Cordoba

Marilyn Cordoba is the founder and owner of Panela Lemon, a Vancouver-based company that specializes in creating plant-based cookies with locally sourced and organic ingredients. Her inspiration for starting the company came from her mother, who taught her how to bake and transform existing recipes into healthier versions. She spent time experimenting in her home kitchen to create a more wholesome way to satisfy her vegan sweet tooth. Marilyn is committed to using organic and sustainable ingredients, as well as sourcing within Canada to support local businesses. Dedicated to ensuring the well-being of her customers, she invests a lot of time researching the ingredients and how the cookies are made. She is originally from South Colombia, where her parents were entrepreneurs. Her mother was an avid baker who used panela sugar as a sweetener, which inspired Marilyn to create her own business.
